Chicken Of The Woods (Laetiporus sulphureus) are Polypores and have about 10% less water in them than the other mushrooms listed so far in this book. As a result of this, they are a little tougher than the other mushrooms and require a completely different cooking technique. Good Chicken of the Woods, like good chicken, is cooked slow.
Chicken Of The Woods are bright orange and sometimes the mushroom can cover three feet of the side of a dead tree. Nothing else really looks like them and because there are no deadly poisonous polypores they are pretty safe for beginners. Chicken Of The Woods are so bright and large they can be easily be hunted from the road. Look for them in the Fall on middle aged to old, recently deceased trees or stumps. This mushroom will fruit on different trees from Eucalyptus to Firs and even Oaks. In the Fall look for large dead trees with the bark mostly intact and you should find Chicken Of The Woods.
The freshest specimens are bright orange and very fragrant. As the mushroom becomes older this bright orange color will degenerate to a dull orange and eventually just look pale and gross. These mushrooms can stick around for a long time so look for the freshest part of the cluster that you find. The outer rings of the mushroom towards the edge will provide the softest most delectable meat of the mushroom.
